“Michelle, my baby is a very picky eater, what are some good healthy snack I can feed my baby?”
These are just a few of the questions I get on an almost daily basis from clients, friends, and other people who contact me on social media. I am always wanting to offer advice and share the things that work for me and my family. Many people battle with what to eat as snacks between meals that will help keep them driving towards their fitness goals and not hinder their progress. If you are in the same boat, you are not alone and this is why I am writing this blog for you today.
These Almond Butter Energy Bites are One of My Favourite Healthy Snacks
Why?
- No Baking Required – so they are quick to make and don’t require a lot of clean up
- These healthy snacks are super easy to grab on the go or have alongside your afternoon coffee instead of chocolate chip cookies
- Not only does my husband enjoy them, but so does my 14 month old toddler! These balls make a great healthy snack for him, or I break them up and put them in his yogurt for healthy protein packed snack for everyone!
Let’s Get to Business and Get you Making These Healthy Snacks
Almond Butter Energy Bites
Ingredients:
- 2 Cups of Mejool pitted dates
- 1/2 Cup of Plain Unsalted Almonds
- 1/2 Cup of Almond Butter
** Optional – 1/2 Cup Unsweetened Shredded Coconut
Instructions:
- Combine all ingredients in a food processor and blend until it turns into a sticky dough texture. If dough is not coming together, try adding a tablespoon of water and keep blending
- Wet your hands and for the dough into small balls and place them on a baking sheet.
- Place the balls in fridge for about an hour before eating and store them in fridge in tupperware container.
- NOTE: If you want to roll the balls in shredded coconut that is tasty also!
