Welcome to my first “healthy baby food” blog post.  I have been posting a lot of pictures of what my son is eating on my Instagram (@corecondition) and many of you have been asking for recipes so keep checking back as I will be continuing to post some of my favourites on a regular basis. 

As a new mom I am kind of obsessed right now with feeding my almost 11 months old the healthiest foods possible.  Many people have told me I will stop caring so much once he is older and just feed him whatever is fast; however, I don’t ‘think I will? I feel like the same way I care about the foods I put in my body, I will care just as much (actually more…) what my son eats as long as I can have any say at least.  The same could be said for adults that when life get’s busy you can just eat whatever is quick and healthy, but I view food as fuel and I am willing to take the extra time to cook healthy meals for both myself, hubby, and baby.  

That being said, life does get crazy busy sometimes!  I have found that meal prepping my son’s food in advance has really helped keep him eating healthy since he started on solids.  I lead a very busy life balancing being a mom, running my training studio (and working there), as well as running my online training, and finding time for friends and family.  Sometimes the days get away from me, but I am always thankful for the time I took to prep Jaxson’s food earlier in the week.   

Here is a recipe that I have found is really easy to make in advance to have healthy snacks for my son.  This recipes makes about 24 muffins, I usually keep 12 in the fridge and then put 12 in the freezer to save for later.  

Enough anticipation, here is the simple recipe:

Avocado, Banana, and Apple Baby Muffins

Ingredients:
  • 1 cup whole wheat or all purpose flour
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 medium banana
  • 1 medium avocado
  • 1 cup unsweetened apple sauce
  • 1 egg
  • 1/4 cup unsweetened almond milk
Instructions
  1. Preheat the oven to 180c / 350f and grease a muffin tin with coconut oil (or oil of choice, or use paper linings) I used a tin with 24 muffins and this recipe filled the whole tin.
  2. Add the flour, oats, baking powder and baking soda to a large bowl and mix with a spoon.
  3. In another bowl mash the banana and avocado together and then mix in the apple sauce. Add the egg and milk and mix well.  Depending on the ripeness of the avocado, you might need to use a food processor to get the avocado completely mashed.

4. Add the wet ingredients to the dry ingredients and mix just enough until all the ingredients have combined.

5. Spoon the mixture in the muffin tin  and bake in the oven for 20- 25 minutes.

6. Allow the muffins to cool completely before removing them to help to prevent them from sticking.

7. Store in the fridge for up to 5 days or freeze and leave to defrost for a few hours at room temperature.

 

 

These are great snacks for adults too!  I made a batch with some dark chocolate chips and even my hubby liked them!
