We all know it’s hard to get more vegetables into our daily food intake, especially if you have a toddler. This healthy muffin recipe helps get more healthy nutrients, including spinach (nutritional powerhouse) into ourselves and our kids. We have been playing around with some different healthy muffin recipes and think we found a winner with this one! This healthy muffin recipe is easy to make and perfect to a quick snack at home or on the go that I feel better about eating and feeding my family vs. store bought (sugar filled) muffins.
In my experience, I have found that my toddler is more likely to eat some of our healthy snacks if he helps make them. He is always proud of his creation and enjoys telling everyone he made them and also eats them himself! He loves fruit and eats it no problem, but I am always looking for new ways to get more vegetables into his daily food intake. I figure every little bit helps and if he can eat a healthier muffin with a little spinach vs. a cookie or crackers, I’m ok with it! Plus even my husband liked them as he is always the ultimate test of if one of our recipes are good, because he knows a good muffin or a good cookie. I don’t mind getting more vegetables into him too!

Ingredients:
- 2 Cups of Whole Wheat Flour
- 3/4 Cup Milk or Unsweetened Almond Milk
- 1 1/2 Teaspoon of Cinnamon
- 1/2 Cup Butter
- 1/2 Tsp Baking Soda
- 2 Tsp Baking Powder
- 1/2 Cup of Honey
- 1 Large Banana
- 6 Ounce Baby Spinach
- 1 Tsp Vanilla Extract
- 1 Large Egg
- 1/4 Tsp Salt
Directions:
- Pre-Heat Oven To 350 Degrees and either use muffin tin liners or grease a muffin tin. We made mini-muffins but you can also make larger muffins based on what you prefer or what tins you have at home.
- Mix all the dry ingredients in a large mixing bowl.
- Use a blender or food processor to mix all the wet ingredients together. Ensure the butter is melted.
- Pour the wet ingredients into the dry ingredients and mix together. Add chocolate chips here if you want to add them 🙂
- Pour the mixture into the muffin tins and put in the oven for 18 to 22 minutes or until the muffins are firm on the top.
- Wait to cool and then enjoy!!
