Who doesn’t love pancakes for breakfast, lunch, or dinner?  Finding this healthy banana spinach pancake recipe that my whole family enjoys is a huge score because now we really can enjoy pancakes for any  meal and know we are still eating healthy.  Being a busy mom and business owner sometimes it’s hard to find easy healthy options that both my little man and big man (hubby) will eat; however, that doesn’t mean I don’t give up on the healthy eating train.  I do my best to prep food in advance, have a meal plan set out for the week, and of course find the easiest recipes that require minimal ingredients and cook/prep time.

As at fitness and nutrition coach I know the importance of getting some form of greens into your diet each day.  The more the better!  Now that I have a toddler (OMG I can’t believe my little man is one!) I feel it is even more important to find recipes that include lot’s of healthy vegetables so my little man can reap all the benefits I have from eating clean.  No I’m not some crazy Mom who went let their kid near sugar, but the funny thing is that he has been eating so healthy his entire life that he doesn’t even care for sugary treats!  We have tried to offer him cookies and frozen yogurt once and a while and he’s just not interested in it.  He didn’t even want to eat his first birthday cake until he could dip his cucumber in it!

OK, enough small talk with me trying to convince you to eat more greens, let’s get on to the recipe already! 

Banana Spinach Pancake Recipe

INGREDIENTS

  • 1 small banana
  • 1 large eggs
  • 1 cup whole wheat flour (or all purpose)
  • 1/2 cup unsweetened almond milk (or other favorite milk)
  • 1- 2 cups lightly packed baby spinach
  • 1/2 tablespoon ground flaxseed
  • 1 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • Coconut oil, canola oil or butter to cook with

INSTRUCTIONS

  1. Add all ingredients to a blender. Blend until you no longer see any noticeable pieces of spinach.
  2. Warm a nonstick pan over medium heat and coat with oil of choice. Pour small rounds of batter onto the hot surface and let cook until bubbles form on the surface and the surface is mostly set, about 2-3 minutes. Flip and cook for an additional minute or two, or until fully cooked.
  3. Continue to prepare the rest of the batter until it’s gone
BONUS TIP: 

Feel free to add strawberries, blueberries, or other fruits of choice into the batter for an added touch.  

**MOM TIP – My little man loves roasted red pepper hummus, so I rolled the hummus up in one of these pancakes and he loved it!
