Well if you are anything like me, you are a busy person who is all about healthy quick meals. This is how I came up with this slow cooker shredded chicken recipe and once I did it was a game changer for me! This slow cooker shredded chicken recipe opened up the flood gates for all kinds of slow cooker chicken recipes.  It has really made my life easier and my husband’s (the chicken taco lover) life much happier! LOL.

As a busy mom who also runs and works in her business it’s often difficult to make sure there is a healthy meal on the table each night; however, I have found many tricks that have helped me not fall off the wagon with cooking healthy meals even on the busiest of days. Whether it is having meals prepped from the day before, having leftovers, or finding recipes that can pretty much cook themselves. The third choice (finding recipes that cook themselves) wins quite often between my slow cooker and rice cooker/veggie steamer combo, and oven the amount of healthy (yet delicious) meals that can be made is amazing!

The first time I made this slow cooker shredded chicken recipe I was amazed at how easy it was! I asked myself why I had been cooking chicken any other way in the past?

 

My husband and myself both love Mexican food and have become avid Chipotle visitors; however, we try not to eat out during the week.  With this recipe it feels like we are eating out, but it’s much cheaper, much easier with our baby, and we have left overs for the next day!  The best part is my 11 month old enjoyed this slow cooker shredded chicken with some avocado for dinner too!  You can use this chicken to to make tacos, taco salads, or just eat is on it’s own with some avocado (like my 11 month old! lol).

Ok enough messing around, let’s get to the recipe!

Disclaimer: I prefer to cook without “measuring” every single thing.  I like to just toss some things in and see what happens, so my apologies for the lack of “measurements” in the recipe below:

EASY SLOW COOKER SHREDDED CHICKEN RECIPE – MEXICAN STYLE

Ingredients:

** Yes only 3 ingredients! I told you it was easy!!! 

  • 4 Chicken Breasts
  • Taco Seasoning (homemade or store bought – enough to sprinkle on top of the chicken, more if you like more spice)
  • Salsa (homemade or store bought – enough to cover the top of the chicken while in the slow cooker)

Instructions:

  1. Place the chicken in the bottom of the slow cooker and sprinkle taco seasoning of choice on top of the chicken.  The amount you put on is up to you based on how seasoned you like your chicken 🙂  Next, spread a layer of salsa on top of the chicken so that the chicken is covered.
  2. Set the slow cooker to low and cook for 3-4 hours or until chicken is cooked all the way through.  Once the chicken is cooked, place it on a plate or in a bowl and pull it apart using two forks.  You can then take some of the extra “sauce” from the slow cooker and it with the chicken if you want it more “saucy” (yup I said saucy!)
  3. Serve the chicken in tacos, on a salad or however you like with whatever toppings you like!

I love this recipe because I can just pop the chicken in to cook at some point in the afternoon and leave it.  It’s ready around dinner time and I don’t have to do much work to create a healthy meal and better yet – very little clean up! 

This possibilities are endless with how you can flavour the chicken while cooking in a slow cooker!
